Lian Hearn writes excellent, Japanese-inspired fantasy. My wife and I fell in love with her books with her first series, Tales of the Otori, and have been hooked ever since. So much of classical fantasy draws on European traditions, to the point where it's easy to forget that it's not the only cultural tradition out there.
